Extra Details: Hello,
Perhaps a more general question because I'm seeing this more often; 'What is considered the Air Date'?
Season 3 was release/aired/became available online last week. See: https://www.sky.com/watch/title/programme/discovery-of-witches/discovery-of-witches/episodes/season-3
The online episodes don't mention a date.
Now I assume that the dates currently used (January 7th, 14th, 21th etc.) are the dates that Sky will air it on TV. But weren't we supposed to use the 'original air date'.
So does TV have priority over online dates?
I cannot find a clear answer in the bible.

As indicated here ("Previews" part), digital previews aren't take in account. So, yes, TV have priority.

This explains nothing.
When the bible was written, was releasing a whole season online considered a 'preview'?
And if TV has priority, how do you handle all the TV shows that were released on streaming platforms (HBO Max etc.) and later came out on TV elsewhere in the world?

This has nothing to do with the case from your initial message.
In the first message, you are comparing online previews on Sky website and the TV broadcast by Sky. In short, the network itself and its own website.
Now, you are talking of streaming platforms and the broadcasting elsewhere in the world. In that case, the priority is the original streaming platform as this platform is the original network. This is the same as if a French TV series is later broadcasted in the US, in which case we take in account only the French original broadcast.
