鼎爺接著分別把陳皮及檸檬葉拌入鯪魚滑,帶來不同口味的「蜆蚧米通鯪魚球」,再蘸上蜆蚧醬佐吃,令人食指大動。

釀酒的材料酒泥,原來也可用於烹調菜式。鼎爺先用荷葉及紗紙包裹鮮雞,再將酒泥拌入米酒調勻成黏土狀,並以之覆蓋雞隻,巧手焗製成味道層次豐富的「阿爺乞兒雞」!
