Even though it's a co production, shouldn't the original language be Japanese instead of English?

No. The Original Language is set to English because the anime is a US-Japanese co-production that first premiered in the US.
And the Spoken Language is set to Japanese because the English version is a dub.

Thank you for the reply and explanation. But, sorry for probably just being slow here, if English is a dub then it's not the original? So "original" means "first aired"?
